You could try anywhere in the Carribean. We found Jamaica, St Lucia and Trinidad and Tobago great.
Sandals and Couples are couples only I think.
Breezes and Beaches have more facilities for families.
Don't you think Matthew will get more out of the travel when he is a few years older ?
I always feel sorry for parents and babies flying as when they cry you do not know if their ears are blocked as they are two younge to tell you. I am sure there are many beautiful places ti visit locally for a few years until Matthew grows up a bit.
References :
Club Med in the Dominican Republic (all-inclusive) is a great choice and will also price out cheaper than Beaches (you're right, they're great but pricey). I have a client who took her kids to Club Med and said it was fantastic.

Please read below for a short description and virtual tour:

PUNTA CANTA, DOMINICAN REPUBLIC
This Caribbean all-suite village is 75 acres of the best that paradise has to offer. Built with families in mind, kids will find fresh adventures and new friends at our award-winning Children's Club. There's a pool just for children, and hours of exciting activities for all ages. For grownups, our ATP/Club Med Tennis Camp is the perfect place to work on your backhand, or you could simply float in a pool as big as your imagination. Of course it's all only a few sandy footprints away from the blue waters of the Caribbean, where a day of snorkeling, windsurfing or sailing is waiting.

VIRTUAL TOUR
